  • 2 cups fresh pumpkin, peeled and diced
  • 1 medium onion, chopped
  • 34 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste

Instructions

  1. Sauté the Aromatics: Heat a large pot over medium heat with a splash of olive oil. Add the chopped onion and sauté until golden brown, about 5 minutes.
  2. Add Garlic and Ginger: Stir in the minced garlic and grated ginger. Cook for another 2 minutes until fragrant.
  3. Incorporate Pumpkin: Add the diced pumpkin to the pot and stir well. Cook for about 5 minutes.
  4. Pour in Broth: Add the vegetable broth and bring to a gentle boil. Reduce heat and let it simmer for around 20 minutes until the pumpkin is tender.
  5. Blend Until Smooth: Use an immersion blender or transfer to a regular blender to blend until smooth.
  6. Add Coconut Milk & Season: Stir in the coconut milk along with cinnamon, nutmeg, cayenne pepper, salt, and pepper. Simmer gently for another 5 minutes before serving.
