- 2 cups fresh pumpkin, peeled and diced
- 1 medium onion, chopped
- 3–4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
Instructions
- Sauté the Aromatics: Heat a large pot over medium heat with a splash of olive oil. Add the chopped onion and sauté until golden brown, about 5 minutes.
- Add Garlic and Ginger: Stir in the minced garlic and grated ginger. Cook for another 2 minutes until fragrant.
- Incorporate Pumpkin: Add the diced pumpkin to the pot and stir well. Cook for about 5 minutes.
- Pour in Broth: Add the vegetable broth and bring to a gentle boil. Reduce heat and let it simmer for around 20 minutes until the pumpkin is tender.
- Blend Until Smooth: Use an immersion blender or transfer to a regular blender to blend until smooth.
- Add Coconut Milk & Season: Stir in the coconut milk along with cinnamon, nutmeg, cayenne pepper, salt, and pepper. Simmer gently for another 5 minutes before serving.
- Serve: Transfer to bowls and garnish with toasted pumpkin seeds or a drizzle of coconut cream if desired.
