  • 1 cup plain Greek yogurt

  • 2 tbsp fresh dill, chopped

  • 1 lb baby potatoes, halved

Instructions

  1. In a mixing bowl, combine Greek yogurt, minced garlic, lemon juice, chopped dill, salt, and pepper until well mixed.
  2. Place chicken breasts in a large zip-top bag or bowl. Pour marinade over chicken, ensuring each piece is evenly coated. Seal or cover and refrigerate for at least one hour (or overnight for best flavor).
  3. Preheat oven to 400°F (200°C).
  4. Toss halved baby potatoes with olive oil, salt, pepper, and optional herbs. Spread evenly on a baking sheet.
  5. Remove marinated chicken from the fridge and let it sit at room temperature for about 15 minutes.
