Instructions
- In a mixing bowl, combine Greek yogurt, minced garlic, lemon juice, chopped dill, salt, and pepper until well mixed.
- Place chicken breasts in a large zip-top bag or bowl. Pour marinade over chicken, ensuring each piece is evenly coated. Seal or cover and refrigerate for at least one hour (or overnight for best flavor).
- Preheat oven to 400°F (200°C).
- Toss halved baby potatoes with olive oil, salt, pepper, and optional herbs. Spread evenly on a baking sheet.
- Remove marinated chicken from the fridge and let it sit at room temperature for about 15 minutes.
