Instructions

  1. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
  2. Stir in fresh spinach and sun-dried tomatoes until wilted. Remove from heat and mix in crumbled feta cheese.
  3. Preheat your oven to 400°F (200°C).
  4. Place pork tenderloin on a cutting board and carefully slice it lengthwise down the center, creating a pocket.
  5. Season both sides of the pork with salt and pepper.
  6. Fill the pocket generously with the spinach mixture, then fold the pork back together.
