Instructions
- Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
- Stir in fresh spinach and sun-dried tomatoes until wilted. Remove from heat and mix in crumbled feta cheese.
- Preheat your oven to 400°F (200°C).
- Place pork tenderloin on a cutting board and carefully slice it lengthwise down the center, creating a pocket.
- Season both sides of the pork with salt and pepper.
- Fill the pocket generously with the spinach mixture, then fold the pork back together.
- Secure the stuffed tenderloin with kitchen twine or toothpicks.
- Roast in the preheated oven for about 25-30 minutes, or until it reaches an internal temperature of 145°F (63°C). Let it rest for five minutes before slicing.
