  • 2 large sweet potatoes (about 2 lbs), peeled and diced
  • 1 lb Italian sausage (spicy or mild)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 large carrots, sliced
  • 2 cups fresh spinach
  • 1 tsp dried thyme
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Peel and dice the sweet potatoes into bite-sized pieces. Chop the onion finely and mince the garlic.
  2. In a large pot over medium heat, add olive oil. Add the Italian sausage, breaking it up as it browns until fully cooked.
  3. Once the sausage is browned, add chopped onions and minced garlic. Cook for about five minutes until softened.
  4. Stir in diced sweet potatoes and sliced carrots. Pour in vegetable broth and bring to a boil, then reduce heat to simmer.
  5. Add thyme, cumin, salt, and pepper. Let simmer for about twenty minutes or until sweet potatoes are fork-tender.
  6. Just before serving, stir in fresh spinach until wilted. Ladle into bowls and enjoy!
