- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ½ cup brown sugar
- ¾ cup unsalted butter, cold and cubed
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs, at room temperature
- 1 tsp vanilla extract
- 1 can (21 oz) tart cherry filling
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick cooking spray.
- In a large bowl, combine flour, granulated sugar, brown sugar, and cold butter. Mix until crumbly.
- Press about two-thirds of the mixture into the bottom of the prepared baking dish.
- In another bowl, beat softened cream cheese, granulated sugar, vanilla extract, and eggs until smooth.
- Pour the cream cheese mixture over the pressed crust evenly.
- Spread tart cherry filling over the cheesecake layer gently.
- Sprinkle remaining crumb mixture on top of the cherry filling.
- Bake for 35-40 minutes or until set in the center and lightly golden on top.
- Allow cooling completely before slicing into bars.
