Description

Experience a delightful blend of creamy cheesecake and tart cherry flavor, all nestled in a crumbly crust. Perfect for gatherings or a sweet treat at home!

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup cold unsalted butter
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup tart cherry filling (homemade or store-bought)
  • Remaining crumb mixture from crust preparation

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
  2. In a large mixing bowl, combine flour, granulated sugar, and cold butter. Mix until crumbly.
  3. Press two-thirds of the mixture into an even layer in your prepared baking dish. Bake for 10-12 minutes until lightly golden.
  4. While the crust bakes, beat softened cream cheese in another bowl until smooth.
  5. Gradually add sugar and mix until well combined. Add eggs one at a time along with vanilla extract; blend until creamy.
  6. Spread the cheesecake mixture evenly over the pre-baked crust.
  7. Spoon dollops of tart cherry filling on top and swirl gently with a knife.
  8. Sprinkle remaining crumb mixture generously over the cherry filling.
  9. Bake for an additional 25-30 minutes until set and golden brown.
