- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
- Add the egg and mix well. Gradually incorporate cocoa powder and flour until fully combined.
- Scoop tablespoon-sized portions of dough into each muffin cup, pressing down to create wells.
- Bake for 10-12 minutes or until just set but still soft. Allow to cool completely.
- In another bowl, combine mascarpone cheese, cooled espresso or strong coffee, and powdered sugar.
- Whisk until smooth and fluffy.
- Once cookie shells are completely cool, fill each cup generously with the creamy mixture using a spoon or piping bag.
- Dust with cocoa powder before serving.
