Description

Tiramisu Cookie Cups are delightful mini desserts featuring a crunchy cookie shell filled with creamy coffee-flavored mascarpone and dusted with cocoa powder, perfect for any occasion.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup unsweetened cocoa powder
  • 1 cup mascarpone cheese
  • 1/2 cup brewed espresso or strong coffee, cooled
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Add the egg and mix well. Gradually incorporate cocoa powder and flour until fully combined.
  4. Scoop tablespoon-sized portions of dough into each muffin cup, pressing down to create wells.
  5. Bake for 10-12 minutes or until just set but still soft. Allow to cool completely.
  6. In another bowl, combine mascarpone cheese, cooled espresso or strong coffee, and powdered sugar.
  7. Whisk until smooth and fluffy.
  8. Once cookie shells are completely cool, fill each cup generously with the creamy mixture using a spoon or piping bag.
  9. Dust with cocoa powder before serving.
