Instructions
- Preheat your oven to 400°F (200°C).
- Slice the spaghetti squash in half lengthwise and scoop out the seeds.
- Brush the insides with olive oil and season with salt and pepper.
- Place cut-side down on a baking sheet and roast for about 30-40 minutes until tender.
- While the squash roasts, heat a skillet over medium heat with a drizzle of olive oil.
- Add minced garlic and sauté until fragrant, about one minute.
- Add ground turkey to the skillet and cook until browned.
- Stir in crushed tomatoes, oregano, salt, and pepper; let simmer for 10-15 minutes.
- Once the spaghetti squash is cooked, use a fork to scrape out the strands into a large bowl.
- Pour the turkey marinara over the squash strands and toss gently to combine.
