Description

Enjoy a guilt-free, nutritious dish with tender spaghetti squash topped with a savory turkey marinara sauce—perfect for cozy family dinners or meal prep!

Ingredients

Scale
  • 1 large spaghetti squash
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 lb lean ground turkey
  • 3 cloves fresh garlic, minced
  • 28 oz canned crushed tomatoes
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Brush the insides with olive oil and season with salt and pepper.
  4. Place cut-side down on a baking sheet and roast for about 30-40 minutes until tender.
  5. While the squash roasts, heat a skillet over medium heat with a drizzle of olive oil.
  6. Add minced garlic and sauté until fragrant, about one minute.
  7. Add ground turkey to the skillet and cook until browned.
  8. Stir in crushed tomatoes, oregano, salt, and pepper; let simmer for 10-15 minutes.
  9. Once the spaghetti squash is cooked, use a fork to scrape out the strands into a large bowl.
  10. Pour the turkey marinara over the squash strands and toss gently to combine.
