- 20 soft caramels
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract; mix well.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined.
- Scoop tablespoon-sized balls of dough onto prepared baking sheets. Create an indent in each ball using your thumb.
- Unwrap the soft caramels and place one in each indent made in the cookie dough.
- Bake in preheated oven for about 10-12 minutes or until golden brown around the edges but still soft in the center.
- Remove from oven and sprinkle chocolate chips on top while still warm, allowing them to melt slightly.
- Let cookies cool on wire racks before serving.
