- 1 lb chicken or turkey sausage
- 1 medium onion, diced

Instructions
- Rinse wild rice under cold water to remove excess starch. In a pot, combine rinsed rice with chicken broth. Bring to a boil over medium-high heat. Reduce to low, cover tightly, and simmer for 40-50 minutes until tender.
- In a large skillet over medium heat, add the sausage. Break it apart with a spatula while cooking until browned (about 8 minutes). Drain excess fat if necessary.
- Add the diced onion and bell peppers to the skillet with the cooked sausage. Sauté until softened (about 5 minutes).
- Stir in minced garlic and cook for an additional minute until fragrant.
- Once the wild rice is done cooking, fluff it with a fork and add it to the skillet along with fresh spinach. Gently stir to combine all ingredients.
- Remove from heat and serve warm, optionally drizzled with olive oil or sprinkled with cheese.
