Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar until combined.
- In another bowl, whisk together eggs, milk, vegetable oil, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Scoop the batter into each cupcake liner until about two-thirds full. Bake for approximately 18-20 minutes or until a toothpick inserted comes out clean. Let cool completely.
- Beat softened cream cheese and butter together until smooth.
- Gradually add powdered sugar until you reach your desired sweetness and consistency.
- Once cupcakes are completely cooled, frost each generously with cream cheese frosting.
- Insert pretzels into frosting as antlers, place candy eyes on top, and finish with a red candy for Rudolph's nose.
