- 1 lb lean ground beef
- 2 bell peppers (mixed colors), diced
- 2 tbsp taco seasoning
- 8 small corn or flour tortillas
- 1 cup shredded cheese (cheddar and Monterey Jack blend)
- Sour cream, to taste
- Pico de gallo, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground beef and taco seasoning. Add diced bell peppers and mix until well coated.
- Spread the beef and pepper mixture evenly on a sheet pan, ensuring not to overcrowd.
- Bake in the preheated oven for about 20 minutes or until the beef is browned and cooked through, stirring halfway through cooking.
- Remove from the oven and place tortillas on top of the hot filling. Sprinkle shredded cheese over everything.
- Return to the oven under broil for about two minutes until cheese bubbles—watch closely to prevent burning.
- Serve with sour cream and pico de gallo.
