  • 2 bell peppers (mixed colors), diced
  • 2 tbsp taco seasoning
  • 8 small corn or flour tortillas
  • 1 cup shredded cheese (cheddar and Monterey Jack blend)
  • Sour cream, to taste
  • Pico de gallo, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef and taco seasoning. Add diced bell peppers and mix until well coated.
  3. Spread the beef and pepper mixture evenly on a sheet pan, ensuring not to overcrowd.
  4. Bake in the preheated oven for about 20 minutes or until the beef is browned and cooked through, stirring halfway through cooking.
  5. Remove from the oven and place tortillas on top of the hot filling. Sprinkle shredded cheese over everything.
  6. Return to the oven under broil for about two minutes until cheese bubbles—watch closely to prevent burning.
