- 4 slices sourdough bread
- 2 ripe avocados
- 8 oz cremini or shiitake mushrooms, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (parsley or chives)
- Red pepper flakes
Instructions
- Preheat your oven to 400°F (200°C). Arrange sourdough slices on a baking sheet and toast until golden brown, about 10 minutes.
- In a skillet over medium heat, add olive oil. Once hot, add minced garlic and sliced mushrooms. Sauté until mushrooms are tender and golden, around 5-7 minutes. Season with salt and pepper.
- While the mushrooms cook, halve the avocados and remove the pits. Scoop out the flesh into a bowl and mash gently with a fork. Season with salt and pepper to taste.
- Spread a generous layer of mashed avocado on each slice of toasted bread. Top with sautéed mushrooms.
- Sprinkle fresh herbs and red pepper flakes on top for added flavor and color if desired.
