  • 4 slices sourdough bread
  • 2 ripe avocados
  • 8 oz cremini or shiitake mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs (parsley or chives)
  • Red pepper flakes

Instructions

  1. Preheat your oven to 400°F (200°C). Arrange sourdough slices on a baking sheet and toast until golden brown, about 10 minutes.
  2. In a skillet over medium heat, add olive oil. Once hot, add minced garlic and sliced mushrooms. Sauté until mushrooms are tender and golden, around 5-7 minutes. Season with salt and pepper.
  3. While the mushrooms cook, halve the avocados and remove the pits. Scoop out the flesh into a bowl and mash gently with a fork. Season with salt and pepper to taste.
  4. Spread a generous layer of mashed avocado on each slice of toasted bread. Top with sautéed mushrooms.
