  • 1 lb beef chuck roast, cut into bite-sized pieces
  • 2 cups fresh broccoli florets
  • 4 oz ramen noodles (fresh or dried)
  • 1/4 cup low-sodium soy sauce
  • 1 cup beef broth
  • 2 cloves garlic, minced
  • 1-inch piece ginger root, grated
  • 2 tsp cornstarch
  • 1 tsp sesame oil

Instructions

  1. Set your Instant Pot to 'Sauté' mode. Add sesame oil, minced garlic, and grated ginger. Sauté for about 1 minute until fragrant.
  2. Add the beef chuck roast to the pot. Season with salt and pepper. Brown on all sides to develop flavor.
  3. Pour in low-sodium soy sauce and beef broth. Stir well to combine and deglaze any bits stuck at the bottom.
  4. Close the lid of your Instant Pot. Set to 'Manual' mode at high pressure for 35 minutes.
  5. Once cooking is complete, perform a quick release of steam. Carefully open the lid and add broccoli florets. Close the lid again and let steam for about 5 minutes.
  6. Stir in ramen noodles into the broth. Allow them to soak for about 3 minutes until softened.
  7. Transfer to bowls and drizzle with extra sesame oil if desired.
