- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 1 cup bell peppers (mixed colors), sliced
- 1 cup carrots, julienned
- 8 oz lo mein noodles (or spaghetti as an alternative)
- 1/4 cup low-sodium soy sauce
- 2 tbsp sesame oil
- 2 tbsp brown sugar
Instructions
- Chop chicken into bite-sized pieces. Slice bell peppers into strips and julienne carrots.
- Boil water in a large pot over high heat. Add lo mein noodles and cook according to package instructions until al dente. Drain and rinse with cold water.
- Heat 2 tbsp of oil in a large skillet or wok over medium-high heat. Add chicken pieces and sauté until golden brown and cooked through (about 5 minutes). Remove from pan and set aside.
- In the same skillet, add bell peppers and carrots. Stir-fry for about 3 minutes until tender yet still crispy. Add minced garlic during the last minute.
- Return cooked chicken to the skillet along with lo mein noodles. In a separate bowl, mix soy sauce, sesame oil, and brown sugar before pouring over everything. Toss until well coated.
- Transfer Chicken Lo Mein to plates or bowls and garnish with chopped green onions if desired.
