Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 cup bell peppers (mixed colors), sliced
  • 1 cup carrots, julienned
  • 8 oz lo mein noodles (or spaghetti as an alternative)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp brown sugar

Instructions

  1. Chop chicken into bite-sized pieces. Slice bell peppers into strips and julienne carrots.
  2. Boil water in a large pot over high heat. Add lo mein noodles and cook according to package instructions until al dente. Drain and rinse with cold water.
  3. Heat 2 tbsp of oil in a large skillet or wok over medium-high heat. Add chicken pieces and sauté until golden brown and cooked through (about 5 minutes). Remove from pan and set aside.
  4. In the same skillet, add bell peppers and carrots. Stir-fry for about 3 minutes until tender yet still crispy. Add minced garlic during the last minute.
  5. Return cooked chicken to the skillet along with lo mein noodles. In a separate bowl, mix soy sauce, sesame oil, and brown sugar before pouring over everything. Toss until well coated.
  6. Transfer Chicken Lo Mein to plates or bowls and garnish with chopped green onions if desired.
