Ingredients

  • 1/2 cup breadcrumbs
  • 1 large egg
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 2 medium sweet potatoes, peeled and cubed
  • 2 tbsp butter or olive oil
  • 1/4 cup pure maple syrup
  • 1/4 cup low-sodium soy sauce
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground turkey or chicken, breadcrumbs, egg, minced garlic, salt, and pepper. Mix until just combined.
  3. Form the mixture into small meatballs (about one inch in diameter) and place them on the prepared baking sheet.
  4. Bake for about 20 minutes or until they reach an internal temperature of 165°F (74°C).
  5. Boil sweet potatoes in salted water until tender (about 15 minutes).
  6. Drain and mash sweet potatoes with butter or olive oil until smooth. Season with salt and pepper.
  7. In a small saucepan over medium heat, mix maple syrup, soy sauce, minced garlic, and black pepper.
  8. Simmer for about five minutes until slightly thickened.
  9. Plate meatballs atop a bed of sweet potato mash and drizzle generously with maple sauce.
