Instructions
- Rinse and soak the pinto beans in cold water overnight for optimal tenderness.
- In a large pot over medium heat, sauté the chopped onions until translucent. Add minced garlic and cook for an additional minute.
- Drain and add the soaked pinto beans to the pot along with chicken broth, bay leaves, and cayenne pepper.
- Bring to a gentle boil, then reduce heat and simmer for about two hours, or until beans are tender.
