- 1 whole turkey crown (4–6 pounds)
- 1 cup unsalted butter, softened
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh sage, chopped
- 4 cloves garlic, minced
- Zest of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat Your Oven: Preheat your oven to 350°F (175°C).
- Prepare the Herb Butter: In a bowl, mix the softened unsalted butter, minced garlic, chopped fresh herbs (rosemary, thyme, sage), and lemon zest until well combined.
- Season the Turkey: Pat the turkey crown dry with paper towels. Season generously with salt and pepper inside and out. Spread half of the herb butter mixture under the skin and over the surface of the turkey.
- Apply Remaining Herb Butter: Rub the remaining herb butter all over the top of your seasoned turkey crown.
- Roast: Place the turkey crown on a roasting rack in a baking dish. Roast in the preheated oven for approximately 1 hour and 45 minutes or until it reaches an internal temperature of 165°F (74°C). Baste occasionally with pan juices for moisture.
- Rest Before Carving: Remove from oven and let rest for at least 20 minutes before carving. Drizzle any remaining juices over slices before serving.
