- 4 medium beets
- 2 oranges
- 1 grapefruit
- 1 cup crumbled feta cheese
- 2 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Roast the Beets: Preheat your oven to 400°F (200°C). Wrap the whole beets in aluminum foil and place them on a baking sheet. Roast for about 45-60 minutes until tender.
- Cool the Beets: Remove the roasted beets from the oven and allow them to cool slightly before peeling.
- Peel and Slice: Once cooled, peel off the skins and slice the beets into wedges or rounds.
- Prepare Citrus: While the beets cool, segment the oranges and grapefruit by cutting off the ends, removing the skin, and carefully cutting between the membranes to release the segments.
- Assemble Your Salad: In a large bowl, layer beet slices alongside citrus segments. Sprinkle crumbled feta cheese generously over the top.
- Dress and Serve: Drizzle with olive oil and balsamic vinegar. Season lightly with salt and pepper. Toss gently or leave layered for presentation. Serve immediately.
