Ingredients

  • 2 oranges
  • 1 grapefruit
  • 1 cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Roast the Beets: Preheat your oven to 400°F (200°C). Wrap the whole beets in aluminum foil and place them on a baking sheet. Roast for about 45-60 minutes until tender.
  2. Cool the Beets: Remove the roasted beets from the oven and allow them to cool slightly before peeling.
  3. Peel and Slice: Once cooled, peel off the skins and slice the beets into wedges or rounds.
  4. Prepare Citrus: While the beets cool, segment the oranges and grapefruit by cutting off the ends, removing the skin, and carefully cutting between the membranes to release the segments.
  5. Assemble Your Salad: In a large bowl, layer beet slices alongside citrus segments. Sprinkle crumbled feta cheese generously over the top.
  6. Dress and Serve: Drizzle with olive oil and balsamic vinegar. Season lightly with salt and pepper. Toss gently or leave layered for presentation. Serve immediately.
