  • 4 cloves fresh garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Juice of 2 lemons (freshly squeezed)
  • Zest of 1 lemon
  • 1 cup low-sodium chicken broth

Instructions

  1. Pat dry the chicken breasts with a paper towel. Season generously with salt and pepper on both sides.
  2. In a large skillet over medium-high heat, heat olive oil. Add chicken breasts and cook for about 6 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).
  3. Remove the chicken from the skillet and set aside. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in chicken broth and lemon juice into the skillet with garlic, scraping up any bits stuck to the bottom. Let simmer for about 3 minutes until slightly reduced.
  5. Return chicken to the skillet, spooning sauce over them. Simmer together for another 2 minutes.
  6. Transfer everything onto plates, drizzle with additional sauce if desired, and garnish with lemon zest or parsley for color.
