Description

Experience the vibrant flavors of Lemon-Dijon Green Beans with Caramelized Shallots, where crisp green beans meet sweet shallots in a tangy mustard dressing—perfect for any meal.

Ingredients

Scale
  • 1 pound fresh green beans, trimmed
  • 2 medium shallots, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash the green beans under cold water and trim both ends.
  2. In a pan over medium heat, add olive oil. Add sliced shallots and a pinch of salt. Stir occasionally for about 8-10 minutes until golden brown.
  3. Bring a pot of salted water to a boil. Add the trimmed green beans and cook for 3-4 minutes until bright green but still crisp. Drain and plunge into ice water to stop cooking.
  4. In the pan with caramelized shallots, add blanched green beans, Dijon mustard, and lemon juice. Gently toss to combine.
  5. Taste the mixture and adjust seasoning with salt or pepper as desired.
  6. Transfer to a serving platter and drizzle any remaining shallot oil over the top before serving.
